Lentils are a staple in many vegetarian diets as they are rich in protein, fiber, vitamins and minerals. One cup of cooked lentils has 17.8g of protein- pair them with Black Beans for additional amino acids. Red lentils are an excellent source of B-vitamins, one cooked cup contains 90% of your recommended daily intake of folate! Lentils are also high in iron, and in other vitamins and minerals such as manganese.
Lentils have a nutty, subtly sweet flavour and cook quickly. They are highly versatile- great on their own, or add them to soups, stews, curries and dips! They pair well with a variety of spices and take on flavours well. Cooking Instructions
As lentils do not need to be presoaked, they can be cooked in less than 10 minutes!
Simply add to water and bring to a boil. Next simmer for 5 minutes, before removing from heat, and let sit until water is absorbed. Cooking may take longer with the addition of salt or acid.
