Corn is a starchy vegetable and cereal grain that has been eaten all over the world for centuries. It’s rich in fiber, vitamins and minerals. It’s a great source of Thiamine, Folate, Magnesium, and Potassium and Vitamin C.  As it is present in many global dishes it is incredibly versatile! Kernels can be added to soups, salads, vegetable dishes, or served on their own. Or grind kernels into a flour for use in tortillas, grits, cookies, or corn-bread! Rehydrated, you can also use corn in salsa, casseroles, in pasta dishes, dips, or soups and chowders. The freeze-dried kernels are also edible as is, so you can toss them in spices for instant corn nuts or even use them in trail mixes.
